Night at the Aquarium

On Friday June 10th I attended The Vancouver Aquarium’s 5th annual Night at the Aquarium gala fundraiser held both inside and outside of the Aquarium in Stanley Park.

Executive Chef Lee Humphries of C Restaurant

This was the 2nd year that I have attended this wonderful event that featured many of Vancouver’s finest restaurants showcasing a delightful array of dishes.

Sangre Morena

Night at the Aquarium is Vancouver Aquarium’s signature gala and has quickly become one of Vancouver’s “must attend” fundraising events. Hosted by the non-profit and self-supporting Vancouver Aquarium, 100 per cent of proceeds go directly toward supporting the Aquarium’s numerous education and research initiatives as well as direct-action conservation programs.

I enjoyed the food,  especially the dishes created by Bishop’s, Hapa Umi, The Boathouse, CinCin, and The Sandbar. I adored the  selection of desserts dubbed ‘Street Food’ from Tacos to Hamburgers and Lasagna to Ice Cream Pops. desserts prepared by the students of the Pacific Institute of Culinary Arts lead by their Pastry Chef Instructor Maurizio Persichino.

Night at the Aquarium

Last Friday June 12th I attended The Vancouver Aquarium’s 4th annual Night at the Aquarium gala fundraiser that raised over $300,000.

Executive Chef Andrea Carlson - Bishops

Night at the Aquarium is Vancouver Aquarium’s signature gala and has quickly become one of Vancouver’s “must attend” fundraising events. Hosted by the non-profit and self-supporting Vancouver Aquarium, 100 per cent of proceeds go directly toward supporting the Aquarium’s numerous education and research initiatives as well as direct-action conservation programs.

“Night at the Aquarium is an evening where members of our community come together to support the Aquarium’s mission of conserving aquatic life,” said Dr. John Nightingale, President, Vancouver Aquarium. “We are extremely grateful to our sponsors and guests for their generosity to help advance our education, research and conservation efforts.”

Executive Chef Frank Pabst - Blue Water Cafe

Over 550 guests were welcomed at this year’s gala, and were delighted by innovative dishes created by Vancouver’s beloved Ocean Wise™ restaurants. Ocean Wise is Canada’s leading sustainable seafood program and one example of the Aquarium’s conservation initiatives. Executive chefs from C Restaurant, Blue Water Café + Raw Bar, Hapa Izakaya, Coast, Diva at the Met and Oru donated their time to treat guests with a range of creative dishes.

Chef Dino Gazzola from The Observatory

Divine dishes included Ocean Wise Dungeness Crab Leg with Elderflower Sabayon and Cucumber Gelee, created by Bishop’s executive chef Andrea Carlson, and Argentinean Chimmichurri Lamb Lollipops prepared fresh throughout the evening by Vancouver Aquarium executive chef Myke Shaw.

The silent and live auction created generous competition among gala attendees. Items ranged from exclusive travel excursions to a private tasting hosted by Canada’s own Iron Chef Rob Feenie.

Night at the Aquarium continues the fund-raising event tradition started in 1994 by Salmonchanted Evening in support of the Aquarium’s research, conservation and education programs.

Making ice cream sandwiches by Pacific institute of Culinary Arts

My friend Ed and I enjoyed the food especially the dishes created by Bishop’s, Blue Water Cafe, C5, The Observatory, Coast, Le Gavroche, Vancouver Aquarium and Rocky Mtn Pizza. The evening ended off on a sweet note with delicious ice cream sandwiches made on the spot by the Pacific Institute of Culinary Arts team.

Shrimps Scallops Provencal

Lamb Shank

Pomme Alumettes

I finally visited this popular Kitsilano eatery, took my friend for some French cooking and we both loved the food, the service and ambience, the only drawback was that it was very noisy in this full restaurant. Our one mistake was wondering why no bread arrived to our table, finally realized the obvious as we left. To begin our meal we went right into the entrees, my friend had the very tasty Shrimps Scallops Provencal ($19) flambe pastis and I had the Lamb Shank ($19) with spiced apricots, tomato and white wine. To accompany our meals we shared the big bucket of Pomme Alumettes ($5) (French fries) with the mayo dip.

Profiteroles Ice Cream

Poire Belle Helene

Who could resist the tempting French desserts, after eyeing the Crepe Suzette being served to the table to next to us, it looked so delicious but too large, since we both like chocolate, we went a different route. My friend had the outstanding Profiteroles Ice Cream ($7) with chocolate and I had the delicious Poire Belle Helene ($6) the French version of a sundae with poached pear, vanilla ice cream, chocolate and whipped cream topped with cocoa. The flavours in everything we had were superb and I am looking forward to a return visit soon. There is a great looking wine list and you can enjoy by the bottle or by the glass!

Poisson D’Avril at Provence Marinaside

Chef Jean-Francis Quaglia

In for dinner with friends on April 1st specifically to partake in their Poisson d’Avril festival of fish celebration. At one point early in the evening I discovered that someone had put a paper fish on my back and that some of the others in my dinner party had also received such fun colourful fish, I knew that there was some madness and that I shouldn’t pre-judge the evening. With paper fish on our backs, it turns out that while we in Canada celebrate April 1st with frivolity, in France they too enjoy some fun and on the 1st day of April all over the country, people attach paper fish cut-outs to the backs of family and friends and they often shout ‘Poisson d’Avril’.

From April 1st through 30th, join Provence Marinaside in Yaletown for some finny fun and fine food at its second annual Poisson d’Avril. The good folks at Provence Marinaside believe you can never have too much of a good thing and have extended the fun to encompass a month-long celebration of all things fishy.

The celebration comes with its own ‘fish forward’ three-course menu offering a ‘school’ of choices for only $45. On it you’ll find fish of every description prepared in a myriad of ways. From sardines to salmon, confit to bouillabaisse there is something to please every fish lover on the extensive menu. For an additional $5 you can also order the Whole Fish of the Day, accompanied by seasonal vegetables and seven-grain rice. Then end on a sweet note with a choice of something decadent from Provence’s regular menu of hand-crafted desserts. Can you say ‘French lemon tarte?’

Duo of Smoked Fish

Halibut Cheek Confit

Halibut

Berry and White Chocolate Clafoutis

I tasted a variety of appetizers and most enjoyed the Duo of Smoked Fish along with the Halibut Cheek Confit. For my entrée, I had the delicious and flavourful Halibut and was fortunate to also taste the outstanding Sardines as well as the Sablefish. For dessert, I had to have my favourite Berry and White Chocolate Clafoutis, a french style cake served warm with vanilla ice cream

During April, some Provence patrons will find a lucky Poisson under their plate or pinned to their coat. These Poissons come with a prize – perhaps a complimentary appetizer, dessert or meal discount or a copy of New World Provence or even a chance to win a personal cooking demonstration class in their home with Chefs Alessandra and Jean-Francis Quaglia.

The restaurant will also offer a daily rosé feature by the glass, half litre or bottle.
